Love eggs for breakfast? I do. Sunny side up, scrambled, poached, hard-boiled, soft-boiled, huevos rancheros, etc. My love for eggs has pushed me to discover several ways to make them anything but boring. It’s a shame my children’s pediatrician limited us to three eggs per week (which led me to sometimes pretend to forget I already had my third egg on Thursday).
Apart from the fact that it’s so easy to prepare, eggs are also packed with nutrients it can be regarded as a complete food in itself. If you are an egg super fan, let me share with you a recipe I invented for breakfast this morning.
Eggs and Chives Breakfast
2 fresh eggs
1 Tablespoon chives, chopped
1 Tablespoon evaporated milk
1 Tablespoon vegetable oil
dash of salt to taste
Heat oil in non-stick pan. In a bowl, whisk together eggs, chives, milk and salt. Pour into pan and cook through!
I’m not so sure if they always have chives in the supermarket. It’s a good thing my father keeps a small garden of herbs behind the house. He has chives, basil (two species of it), oregano, rosemary, pandan, coriander, several species of chili peppers and mint. Love mojitos? Drop by my father’s house, he’s got fresh mint and lots of ice. Oh, by the way, he’s got lime, too. Just make sure you bring your own Cuban white rum.
